Easy Peasy Gluten-Free Spinach Pancakes
I love making these pancakes for my son's breakfast because they're quick, tasty and healthy. Pancakes don't have to be a weekend-only treat when they're made with nourishing ingredients. We have them two or three times a week, and they work for kids and adults alike. They're gluten-free, high in fiber and have no refined sugar.
Ingredients
- 1 egg
- 1 medium banana
- ½ tsp baking powder
- 1 cup spinach (or other greens like baby kale)
- 2 Tbsp buckwheat flour (brown rice flour or another flour you have works too)
- 1 Tbsp hemp seeds (optional)
- ½ tsp spirulina (optional)
- Maple syrup or honey to serve (optional)
Directions
- Blend all the ingredients until you have a pancake-batter consistency.
- Heat a non-stick pan and add a little butter.
- Pour in the batter and cook for 2–3 minutes on medium heat, then flip and cook the other side.
- Serve with your favorite toppings, or enjoy them plain.
